Ingredients:
1 lb. Italian sausage
1 onion, chopped
3 cloves garlic, minced
2 carrots, chopped
2 stalks celery, chopped
1 (14.5 oz) can diced tomatoes
4 cups chicken broth
2 cups water
1 tsp. dried basil
1 tsp. dried oregano
Salt and pepper, to taste
9 oz. tortellini
2 cups fresh spinach, chopped
Grated Parmesan cheese, for serving
Instructions:
In a large pot or Dutch oven, cook the sausage over medium heat until browned. Drain any excess fat.
Add the onion, garlic, carrots, and celery to the pot and cook until the vegetables are tender, about 5-7 minutes.
Stir in the diced tomatoes, chicken broth, water, basil, oregano, salt, and pepper. Bring the mixture to a boil, then reduce the heat and simmer for 15 minutes.
Add the tortellini to the soup and cook for an additional 8-10 minutes, or until the pasta is tender.
Stir in the chopped spinach and cook for another 2-3 minutes, until the spinach is wilted.
